Tasty Tuesday: Snack Bars

First of all, these things turned out so delicious! I want to eat it all in one sitting, but I’m trying to lose weight.  I was going to do something sweet and awesome, like cookies or something this week.  Then I decided that I really wanted to try and do something healthy or somewhat healthy.  So I went on a recipe search.  I had seen it done before and I knew it sounded super easy, I like things that are easy!

I found all kinds of recipes for these, but none of them were really what I wanted, so I took what I had learned and made what I wanted.

The ingredients:

  • Dried Dates (All the recipes called for fresh dates…but I couldn’t find any.
  • Dried Cherries
  • Almonds
  • Pistachios
  • Pumpkin seeds
  • Sunflower seeds
  • Unsweetened coconut
  • Baking cocoa. Unsweetened

photo (7)Step 1:  Put into a blender the nuts and seeds.  I used 1/2 cup of each nut and each seed.  Coming to 2 cups of nut/seed mixture.

Step 2:  Dump the dry stuff into a bowl and load the blender with the Dates, Cherries, and coconut.  I put the coconut in here because I had to get the frozen kind, so it was still a little wet.  The directions that I read said to blend until it forms a ball in the blender.  My blender didn’t work to well and everything was stuck to the sides…so I just scooped it out at that point and formed a ball with it. Also, I didn’t measure this part! I just did a handful of dates and cherries and added coconut until I thought it was good.  I’m sorry…I should have measured.photo (10)Step Three:  Add the date/cherry/coconut mix with the nut/seed mix.  Add cocoa to the dry stuff first!! I added the cocoa on top of the date/cherry mix and got chocolate all over my hands!photo (11)Step Four:  With your hands, mix everything together.  Keep mixing until all of the nut/seed mix is not falling off of the gooey ball! photo (12)Step Five:  I put mine into a rectangular container lined with wax paper to get it into some kind of form.  You can just roll it into balls, or hand shape it into a rectangle to cut into smaller bars.

photo (13)After I got my rectangle I cut it into five pieces and wrapped them in wax paper.

photo (14)I read that these can dry out quickly, so to be safe I stored all my bars in a ziplock bag and stuck them into the refrigerator.  They are really good.  Even my mom likes them.

In the future I would like to make these with more organic ingredients.  Nuts and seeds with no salt and cherries with no added sugar.  The dates add sweetness, which is why you don’t need added sugar.  I will let you know how they turn out with the organic stuff.  It might not be as good.

If you try these, let me know what you think or if you did anything different then I did.  These were fun to make, but I think that was just because I got to get my hands dirty!
